In terms of first person shooter/shoot 'em up games, Call of Duty 2 is my personal favorite. Day of Defeat and the Red Orchestra series are also good if you are looking at multiplayer shooters. The Red Orchestra games are fairly challenging in that you don't benefit from aided aiming and if you are shot once, you'll die, but it's more realistic than the CoD games where you can take a lot of damage and regenerate health.
For more squad-based games, the Close Combat series done by Microsoft and redone by Matrix Games are personal favorites. They show their age and aren't very fancy to look at, but again, they're pretty realistic simulations of small arms combat set in WWII. The Bridge Too Far game set in Operation Market Garden is a personal favorite, as is the Eastern Front/Cross of Iron one. I also hear a lot of good things about the Combat Mission games set in WWII, although that is more at the regimental and battalion level. Combat Mission: Red Thunder takes place during Operation Bagration and it has decent graphics as well.
At the grand strategy level, that is, playing as entire countries with little NATO counters standing in for entire divisions, the Hearts of Iron series is classic. I would suggest skipping Hearts of Iron III and either waiting to see if Hearts of Iron IV is any good, or sticking with Hearts of Iron 2: Darkest Hour.
