What exactly were Russia's war aims in World War I?
Any thoughts on this?

When? Before the War started, maintain it's prestige as great Power, defend Serbia, maintain it's influence in the Balkans. Backing down was viewed as being a blow to the prestige of the state, and possibly dangerous to it's stability. As internal troubles followed defeat against Japan in 1905.
Once the War started, like everyone their Aims expanded.

When the war started? Depends. Once the war started, but before the Ottoman Empire got involved: annexing Austrian Galicia and enlarging Russian controlled Poland. Once the Ottomans entered, control of the Turkish straits and Eastern Anatolia got added to the list.

Also, what about East Prussia? Did Russia want to conquer and annex East Prussia as well?

I think the expanded Poland would be at EP's expense, though I don't anything was really fleshed out at that point.
