Granted, they were kind of drafted into the Axis, but then so was Finland to an extent.

If you mean why Thailand is not included in this category that is because it deals with the smaller Axis nations in Europe.
So far we have not had much discussions about Thailand so there has not been any need for a section of its own.

Please pardon my ignorance: was Thailand an ally of the Axis powers? Any chance somebody could list other little-known (at least to me) Axis allies?

Yes. Well, perhaps co-belligerent is better.
