Did these formations have official OBs or were they rather based on what was at hand?

I think there was only one in existence Panzerjagd-Brigade 104

According to Tessin cited in the recent book, The Devil's General there were many.

No armor was included? The Panzer-Graf's unit contained Pz. IV Panzerjäger according to the book.

I think there are two types of unit being referred to here. The summary by Christoph is for the end war infantry based "Heeres-Panzer-Jagd-Verband (fahrradbeweglich)", which as he's described were largely blokes on bicycles and given fistfuls of panzerfausts (thanks for the description by the way, I never tracked down 1105a and 1148). Armoured anti-tank units would be equipped with AFVs and there were myriad types of SP and towed atk guns that could have been found, so you probably need to define a particular unit to home in on.
