I have a few (really a whole lot but just a few for now) question about the names of some of the positions in the KStN.

1)

Dolmetscher - Interpreter
Sprachmittler - Translator (?), Language Specialist (?) [from XXX.A.K. Offizierstellungbesetzung 1941]

was one title more skilled at a language than the other?

2)

Sachbearbeiter - administrator / official (?)
Fachbearbeiter - skilled worker / specialist (?)
Mitarbeitar - assistant / co-worker (?)

3)

Kraftfahrwesen - automotive engineering (the science of it)
Kraftfahrzeugwesen - motor vehicles (the actual vehicles) [from XXX.A.K. Offizierstellungbesetzung 1941]

All three question concern words with similar meaning but I am trying to get the distinction correct.

You are right.
Dolmetscher was simply an Interpreter, most likely a Beamte position.
Sprachmittler was both Translator and Interpreter, so he was more skilled, not necessarily in foreign language, but more in knowledge of foreign culture and customs.

ad.3
Second one, you are right, it's about motor vehicles matters.
But first one, I think it's about motor transport matters.

Could be Offizier für Gebirgsfragen (in Gebirgsdivision).

For enlisted men, it's easy:
  Sachbearbeiter - administrator / official (?) — Clerk
  Fachbearbeiter - skilled worker / specialist (?) — Specialized Clerk
  Mitarbeiter - assistant / co-worker (?) — Assistant Clerk

For officers, it's more difficult. My take:
  Sachbearbeiter - administrator / official (?) — Officer charged with specific duties
  Fachbearbeiter - skilled worker / specialist (?) — Officer charged with specialized duties
  Mitarbeiter - assistant / co-worker (?) — Specialized Official

Could be Offizier für Gebirgsfragen (in Gebirgsdivision).

That was my guess but then I thought, that doesn't make any sense but on further consideration:

the entry for the officer

XXX.A.K.

Offz.f.Geb.Fragen
Oberstleutnant Seitz [15.02.1941], [15.03.1941] - these are just the date I have references to him.
(01.10.1940) - just his promotion date, very helpful especially if you only have the officers last name

the XXX.A.K. was down in the Balkans so having a Gebirgsoffizier with the corps staff to answer question about operations in the mountains does make a lot of sense.
