Any idea what a "Tunnelbau" would mean for E.722? A Dombunker for railway guns like in the Calais area?

Sounds logical , AFAIK there was no rocky terrain at the site of E 722 .

I think that the "tunnelbau" could have actually been a real tunnel . Construction of a tunnel had already started indeed in 1944 near the former railroad tracks at Anse du Poulet, west of Anse du Brick and had achieved a small tunnel by June 44. These are the railroad tracks on which MKB Gneisenau travelled when it was positioned near Cherbourg at different times in WW2. The two entrances of the small tunnel are still visible today.
The purpose of this tunnel seems to have been controversial until today: ammunition storage, bunker network, etc. !

It's possible Emmanuel , but for four large railway guns it looks to small .
My personal opinion it's more for two front parts of Schartenstanden ??

I was thinking for only one railway gun at a time for dispersal reason. If you put all four guns in one tunnel and your enemy is able to block both entrances or destroy the tracks on both sides, your all 4-gun unit is doomed.
But building a bunker on each side and linking them with a small tunnel is definitely easier !
The mystery of the tunnel at Anse du Poulet ("Cove of the Chicken" ) remains then.

I wonder what a Panzerdrehschartenstand is. Sounds like a complicated term for a Panzerdrehturm? Or is there another explanation?

Don't think so , Rommel was 01-04-1944 at Grennevillers , the Drehturm was already poured. Date document 25-04-1944 .

According to "Regelbauten der Kriegsmarine", the official term for the revolving concrete cupola is "Stahlbetondrehkuppel".

This is from the 15 AOK, date 04-08-1944 , also with tunnels for E batteries .
Please note that beside the railway gun also the train and one or two ammunition wagons
must be placed in the tunnel in A .
