I dont know any sites but the book Tactics on the eastern front by Eike Middeldorf (a veteran) is very very good.

You can find some interesting data in "Handbook of German Military Forces" written by the US War Department in March 1945 and reprinted by the Louisiana State University in 1990 after the document had been declassified. 8-)
