Stg44 comes about earlier

Let's say for magical mysteries the Germans manage to develop the StG44 in..........1941 :D Mass production.

How much would this have changed the war, if at all?

Well, the MP40 was a good weapon as well, so I don't think it would have changed that much. Maybe finished a few more russians, but that's it.

I also think it would have taken away enerfgy that could have been used better...

And it would have taken away a little more raw material from other production. At least 0.4 kg more per StG44 compared to MP40... :) BTW Icehockey World Championships in Göteborg right now!!!
