Type XVII-K. But we're canceled before anything was done.

That is what is listed in GERMAN WARSHIPS OF WORLD WAR II, by J. C. Taylor (1966)

XVIIK Germania Werft, Kiel
U.798 Not completed, scrapped
U.799 Cancelled
U.800 Cancelled

But both Groner, DIE DEUTSCHER KRIEGSCHIFFE 1815-1945, Band 3, and Rossler, THE U-BOAT state that only one Type XVIIK U-Boat (U-798) was ordered as an experimental type with closed cycle propulsion and make no mention of any further boats being ordered of this type. U-798 was laid down but never completed.

U-799 and U-800 are not listed in 'U-boats never laid down' in uboat.net

GERMAN WARSHIPS OF WORLD WAR II mentioned above:

IXC40 Seebeck, Wesermunde
...
U.817-820 Projected

Again, not listed in Groner nor on uboat.net

U-BOAT OPERATIONS OF THE SECOND WORLD WAR - VOLUME 2: CAREER HISTORIES, U511-UIT25, by Kenneth Wynn, notes

U 807 - U820 were never built

although Groner (English edition) notes

U807-808: construction suspended 30 Sept 1943

U809-812: construction suspended 20 Sep 1943; cancelled 22 Jul 1944

U813-816: cancelled 30 Sept 1943

Again, GERMAN WARSHIPS OF WORLD WAR II:

VIIC Stuelcken Sohn, Hamburg

***
U.909-918 Cancelled
U.919-920 Projected

U-BOAT OPERATIONS OF THE SECOND WORLD WAR:

U 909 - U920 were never built, orders cancelled

Groner, Volume 2, English edition, for Type VII C/41

U909-U912: construction suspended

U-919 and U-920 not mentioned in Groner

I believe u-boat.net has access to a lot more sources than I have, so if a U-boat is not mentioned there, the U-boat most likely was never projected or ordered

German Warships of World War II, as cited above

VIIC Neptun-Werft, Rostock
****
U.943-950 Projected

U-Boat Operations of the Second World War Volume 2, as cited above

U 943 - U 950 were projected but never ordered

Not listed in the English edition of Groner (Volume 2), last entry for Type VIIC is "U931-U936: construction halted 30 Sept 1943", next entry is for U-951.

German Warships of World War II, cited above:

VIIC41/42 Nordsee-Werke, Emden
****
U.1121-1130 Projected

VIIC41/42 Howaldts Werke, Kiel
****
U.1153-1160 Projected

U-Boat Operations of the Second World War Volume 2, cited above:

U 1121 - U 1130 were projected but never ordered

U 1153 - U 1160 were projected but never built

Not listed in the English edition of Groner (Volume 2), last entries in these series for Type VIIC are "U1111-U1114: construction suspended; cancelled 22 Jul 1943", next entries are for U 1131, U1132, then "U1133-U1140: construction suspended 30 Sept 1943, U1141-U1146: cancelled 30 Sept 1943", next entry is for U1161.

And this note in The U-boat The evolution and technical history of German Submarines, by Eberhard Rossler, 1981 English version

"However, after the Supreme Commander-in-Chief of the Navy had decided in favour of large series production of the new Type XXI..., General Director Merker, the new head of the Main Committee for Ship Construction, suspended all work on the Type VIIC/42. All contracts were withdrawn on 24 July 1943." (page 160)
