De Gaulle actually wrote an article about his time in Poland, although he did so anonymously. It is "La Bataille de la Vistule : Carnet de Campagne d’un Officier Français" in the Revue de Paris. Of course it is in French, but it can be found on-line via the Bibliotheque Nationale site.
