You will hear people mention how Russia and Japan have never signed an official peace treaty ending the state of war between them from WWII.
Has Germany ever signed any peace treaties with former Axis and co-belligerents (Italy, Romania, Bulgaria, Hungary, Finland) that declared war on them? If not, then why do people never make a big deal of the lack of an official peace treaty between Germany and those nations?

Not entirely true. Japan & Russia signed the Russian-Japanese Joint Declaration of 1956, which officially ended the state of war and normalized diplomatic relations between the two. But, yes, they never signed an official peace treaty.
