Udet and a deal with the devil

I was flipping through the channels a few days ago while waiting for a movie to start and came across a documentary dealing with Ernst Udet. It mentioned a quote from him saying something to the effect that "if you want to be a great flier, you have to make a deal with the devil". Has anyone got the correct quote? Preferably both in German and English.
