Does anyone know about any case study of Jews from one town or county in Europe and their fate during the war? How many survived, how many perished etc.

you might want to check the web site for the Holocaust museum in Jerusalem, Yad Vashem. They have a large, maze-like monument on the premises of their museum entitled "Valley of the Destroyed Communities", listing many European communities impacted. I understand they have a large data base about these communities as well. http://www.yadvashem.org.il/
