Mechanics of the German draft

Hi there: I am interested in learning more about hte administration of the German draft, more so in the beginning of the war than at the end. Like I get that there was general conscription, but I don't think it was the case that *every* able-bodied male was drafted into the war were they? Were there exemptions for farmers, special trades? That kind of thing. And who decided whether you fit that exemption?

Perhaps more importantly, if you were drafted, did draftees have *any* choice about service? How did the services cooperate (or compete) for draftees internally?

I realize these are a lot of questions, so if someone could point me to some reading, I'd be grateful!
