I do believe it’s authentic looking as it is clearly worn however I’m fairly new with German militaria. I’ll see what I’ll do.

It's an original and shattered 1936 Feldbluse.
But the question is ; National eagle and shoulder straps has been removed, what need do you have to collect these rags ?

Well, as you remember this post of mine from several years ago, I got this one , and I did find an breast adler that fit perfectly and had the tattered look as well,

and it looks kind of cool hanging up in the dusty corner of my workshed

That NCO Waffenrock ( Pioneer ) at least has sleeves, but the "Litzen" of cuffs are in an inverted position with the button facing down. :?
and absence of "Tresse" around both cuffs.
Do you know the reason ?

I could just purchase original parts and sew them on, plus it looks to be “summer” adapted.

I dont know how long you've been collecting but no. No such a way this would ever been done by a German soldier or even a PW. Summer adapted is at the very best an adventure in some very creative thinking. If your new to collecting BUY the item NOT the story. More likely some zit faced teenager took off the insignia, cut the sleeves, and wore it out for a night of Romper Stomper.

A good restorer could actually save this feldbluse which is absolutely original. Original insignia can be had. Scraps still come up that would help. Believe it or not the wool on scraps can be used to save other items that have been mothed by shaving and gently gluing into place. Museum conservators save items such as this one and Mark's Waffenrock regularly.
