Are there any good books discussing this? Like how did the Greeks support an overland advance from the Aegean fairly deep into Anatolia?

Mate,

Sorry but works on the Greeks during this time is limited in English.

Maybe some Greek source maybe out there?

What it know from what I read, they had a bad system which poorly supplied there forces.
And the stupid Greek General/s pushed there forces to far to fast, which enabled Turkish forces to check them and later push them back.

Even books in english on the Turks / Greeks during this time is limited, so the peroid is often overlooked by Western sources

Try to find a copy of A Concise History of the Campaign in Asia Minor by the Hellenic General Staff. A quick look through the book didn't show any chapters focused solely on logistics, but IIRC it does have some comments/statements throughout the narrative. It has been a few years since I read the book, so I can't comment how much is discussed. The Turkish officials for the same war have a lot of logistical information, and the Hellenic official histories of WW2 included a logistics volume.

There is a pretty good outline of the campaign in the Osprey book:

can't remember if there is any detail on logistics.
