Using the original data I've put together a chart showing the safe thickness and relative obliquity of german RHA under attack from 2cm PzGr.
The stark difference between its performance against RHA and FH plate is clearly owed to the fact that the RHA couldnt reliably break this shell under normal impact. Its sharper nose showed superior performance in that regard.
And yet the same plate was enough to damage the 3.7cm projectile as we can see on the relative safety curve.
It seems that they've chosen the hardness specs for 35-50mm plate with the goal in mind to reliably damage the 3.7cm projectile even at normal impact, which might've degraded plate performance against heavier attack, like the 5cm shell, as we can see from very acute angles of attack required to obtain complete protection.

The relatively better Performance of the 2 cm Pzgr at 90° Auftreffwinkel can be traced down to the more tipped ogive (i think ~2,0 crh)
compared to the more blunter crhs 1,3 for 3,7 cm and 1,1 for the 5,0 cm ;
The different ogives produce somewhat different oblique performances there is also a chart in the Bericht 177 der Lilienthalgesellschaft.
Additional ther might be some "scaling" effect between the 5,0 cm and 7,5 cm projectiles caused by the physikal properties of the used armor plates
on the downside the 2 cm projectile was more likely susceptible to projectile breakage (shatter gap)
compared to the more blunter crhs 1,3 for 3,7 cm and 1,1 for the 5,0 cm ;

There is very little info on the anti armour capabilities of this gun, so I think these might be useful to have. The 30° values for high velocities might be a bit optimistic.

"Panzer Tracts 3-2" says that "30mm of armour protects from 2cm weapons at 400m for 0° and at 30° at all ranges" so the previous results check out.

This source reports the penetration at 90° (normal impact) at 100m distance as 37mm of armour.
