Glantz, Lawrence, Nipe, Zamulin and Töppel. Sadly there is no definite book about Kursk.
Kursk - The German View by Steven H. Newton is also reccomendable.
For short summeries the Osprey (north, south) books are quite good.

There are interesting chapters covering Kursk in John Ericssons The road to Berlin. And Glantz's When titans clashed. Lloyd Clark wrote a book titled Kursk, but I cant say I like his style of writing.
